The Ultimate Comfort Banana Bread Recipe
Today we’re baking something delicious—banana bread! It’s been said that flowers to a woman are like banana bread to a man. So, if you’re looking to surprise someone special with a warm, homemade treat, this recipe is the one to try. This banana bread is my go-to for sharing a little love with friends or even treating myself. It’s warm, comforting, and easy enough to whip up anytime you have ripe bananas staring you down.

Why I Love This Simple Banana Bread Recipe
This recipe freezes and defrosts well too, so it’s almost just as easy to make two loaves at once, especially if you have some ripe bananas. You don’t have to change anything other than double your ingredients and the size of your bowl, so you don’t make a mess. You could eat one loaf and have one to save. Then the next time you want something yummy, just pull it out of the freezer, thaw and enjoy!
Work Smarter, Not Harder
That’s something that I’ve learned… Our kids moved out of the house within the past year or two. Before that, I’ve always cooked for about four to six people. At first, I thought I was going to have to start figuring out how to cut all my recipes back, but then I got smarter instead. I realized I need to still make the same amount for each meal but just put half in the freezer!
It’s been so wonderful just being able to basically shop my own freezer for a meal when we need something quick. It’s still homemade, it’s still delicious, but it’s not something I had to make fresh on the days when I didn’t have the time or energy.

Banana Bread Ingredients Needed
Here’s what you’ll want to gather before you begin…

- Flour: I use organic whole wheat, bread flour or all-purpose works just fine. If you use white flour, you might want to reduce baking time slightly.
- Sugar: Raw sugar or white sugar works well. I haven’t tried honey or other major substitutions, so I can’t promise results there.
- Bananas: Three ripe bananas—if yours are getting too soft, peel and freeze them in a ziplock bag. They’re perfect for baking or smoothies when you’re ready.
- Eggs: Two eggs —mine are from my farm’s rainbow layers (they make me happy!)
- Butter: One stick, softened—not melted, to avoid cooking the eggs when mixed.
- Baking Soda: A teaspoon. Fun fact: I keep mine handy because it’s a quick remedy for heartburn!
- Salt: Half a teaspoon.
- Pumpkin Pie Spice: A teaspoon or so. If you’re not into pumpkin spice, substitute with cinnamon and a little nutmeg.
- Vanilla: About one teaspoon.
- *Optional: Chocolate Chips for a tasty twist!
How to Make Marry Me Banana Bread
Step by Step

- Prepare the Pan: Butter your loaf pan and line it with parchment paper. This ensures your bread won’t stick and makes cleanup easier—especially if you’re adding chocolate chips.

- Mix Wet Ingredients: Soften the butter (about 30 seconds in the microwave if you’re short on time). Don’t melt it completely! Cream the butter with the mashed bananas (the riper, the easier to mash). Add the eggs and vanilla.

- Mix Dry Ingredients: In a separate bowl, whisk together your flour, sugar, baking soda (make sure it’s lump-free), salt, and pumpkin pie spice (or cinnamon and nutmeg).
- Combine: Slowly add the dry ingredients into the wet mixture. The batter will be thicker than cake batter but not as thick as bread dough. Mix carefully to avoid flour flying everywhere.
- Add Chocolate Chips (Optional): Fold in about one cup of chocolate chips—just enough to get plenty in every slice without overloading.

- Pour & Bake: Spread the batter evenly in the pan, pressing it into the corners since it won’t level out by itself. Bake on the middle rack for about 70 minutes.

How to Serve and Store Banana Bread
Toasted with a little butter is one of my favorite ways to enjoy this treat! Store your loaf covered at room temperature for everyday snacking. If you make a double batch and want to freeze the second loaf, let it cool completely before placing it in a Ziplock bag and transferring to the freezer. For longer-term storage, you can wrap it in parchment paper first and then place it in the bag. That said, I’ve frozen mine in just a Ziplock bag for a month or two, and it’s worked great!
